BACOLOD'S CHICKEN INASAL
When in Bacolod, one must never, never, never miss out on the chance to eat chicken inasal. Inasal is a generic term for any meat that's broiled or grilled. It usually applies to chicken and pork. Beef inasal, of course, is unheard of in the Visayas.

The reason for their juiciness and tenderness upon serving is that meat is cooked only when ordered. In Manila and elsewhere, meat is half-cooked, then returned to the grill when someone orders hence the meat comes out dry and tough.

MORE! MORE! MORE! AAAGH! i'm going to go home to bacolod this nov so can't wait to go food-tripping ulit. it's funny cuz when one mentions bacolod, it's always about food & dining (if not masskara)... kahit ala masyado heritage sites (except silay), patok pa rin dahil sa food.
just wandered on to your site from another blog. very interesting! even more so because i haven't been to bacolod in a while and it was nice to see pics and reminisce. mmm...chicken inasal with garlic rice and toyomansi.
